Smurf cupcakes

I feel so productive today.  Would you like to know why?

I'LL TELL YOU.

Before 8:00 this morning I made two batches of cookies.  One chocolate chip, and one sugar.

By 9:30 I was home from Walmart with the last things we need for Gibson's party.  And also McDonald's breakfast because I forgot that little tastes of cookie dough don't count as a meal.

By 10:44 the second round of smurf blue cupcakes was in the oven.

By 11:10 I will have 48 smurf blue cupcakes.  THAT'S A LOT OF BLUE CUPCAKES, PEOPLE.

...I honestly don't know what I'm going to do with them until tomorrow.  I need many ziploc bags.

And tomorrow I get to make buttercream icing (MY FAVORITE) to put on the cupcakes!  Yay!

I have never loved my KitchenAid stand mixer as much as I do today.  For real.

And I think I'll use my mixer to shred the 12 pounds of chicken I bought to make barbecue chicken.  Because shredding chicken with forks is the worst.

If you need me, I'll be in the kitchen cooking and trying to ignore the fact that my tiny baby is a big boy who is turning one on Sunday.

Oops!  I forgot a photo!  I know you can't see his face, but this kid is just too funny.  He loves being wrapped up in blankets!

  1. Ummm, wow!! I now feel like the laziest mama on the planet! Before 8:00 am, I can't even say the word cookie!! You should feel very proud. Have a great time at your son's birthday party bc let's face it...1st bday parties are really a celebration for the parents because we survived the first year!!! That is easier said, then done! Congratulations :-)

    1. Haha, I promise I'm NEVER this productive! Before 8:00 I usually feed Gibson breakfast. And maybe put on pants. I have to be productive today because I've been lazy all week! :D

      And thank you! I agree, it's no easy feat to get through the first year...it's been a tough one! But at the same time, it was the best year of my life so far, for sure!

  2. you're a rock star. also, YES to shredding chicken with forks being the worst! you can use a kitchenaid for that?! (i still don't have one yet even though i was always under the impression that OF COURSE ALL WOMEN GET KITCHENAIDS WHEN THEY GET MARRIED) :)

    1. I shredded my chicken with the mixer and it was a revelation! It shredded up in a matter of seconds with no forks at all! Also, I didn't get a KitchenAid when I got married, either! But my mommy found it on Black Friday and I got it for Christmas! She's a nice lady.
